Muhallabia (Lebanese Dish)



After Lebanese Night... Here comes my another Middle Eastern Dessert which is also a Labanese Dish... Basically this dish is from Turkey, Labanon, Syria, Jodern, and Cyprus... "Muhallabia" ..... A delicate, silky, creamy milk jelly, rice pudding which is flavored with rose water and topped with chopped Almonds and Pistachio's... It is served in many different ways.. This dessert is prepared in 30mins... And taste is superb and refreshing...!!!

Ingredients :-


  1. Milk - 500 ml
  2. Rice flour - 3/4 tbsp
  3. Cornflour - 2 tbsp
  4. Sugar - 4 tbsp
  5. Rose Water - 1/2 tsp
  6. Vanilla Essence - 1/4 tsp
  7. Heavy Cream / Whipped Cream - 3 tbsp
  8. Pistachios (Chopped) for garnish
  9. Almonds (Chopped) for garnish
  10. Mint Leaves for garnish


Method :-


  1. In a heavy bottom pan mix together milk, cornflour, rice flour and sugar.
  2. Put on gas and switch on the flame.
  3. Cook on medium flame for 5-8 mins, stirring continuously.
  4. When it starts boiling cook for 2-3 minutes more.
  5. Switch off the gas.
  6. Now add vanilla essence, rose water and heavy cream. Mix very nicely.
  7. Pour in the dessert cups/mousse cups.
  8. Sprinkle chopped pistachios and chopped almonds.
  9. Garnish with mint leaves.
If u want u can add a layer of fresh chopped fruits also.

“Lebanese Nights” Or "Layali Lubnan"




Its name directly translating to "Lebanese Nights", "Layali Lubnan" is a ubiquitous and well-loved dessert not only in Lebanon, but throughout the Middle East. It is an incredibly delicious dessert, at its base is a soft, yet sliceable semolina pudding that’s then covered in rose flavoured cream, fruits, nuts and simple sugar syrup or drizzled with a rose-scented syrup. Traditional versions are almost always garnished with pistachios. I prefer to make it without the syrup and like to add a few drops of pink food colouring to give the dessert a vivid pick of colour which contrasts so beautifully with the whipped cream. Very pretty and highly refreshing in the summer time..






Ingredients :-


  1. Milk - 2 cups
  2. Rava (Soji) - 1 cup (Do not Roast)
  3. Condensed Milk - 5 tbsp
  4. Rose Water - 1.1/2 tsp
  5. Whipped Cream - 1/2 cup
  6. Powdered Sugar - 2 tsp
  7. Pistachios(Chopped) - 5-6 tbsp
  8. Rose Petals - 2 tsp
  9. Rose Syrup - 3-4 tsp (Optional)
  10. Pink Food Color - 1/4 tsp


Method :-


  1. In a heavy bottom pan cook milk, rava(soji), and condensed milk.
  2. Keep stirring continuously so that there should be no lumps.
  3. Add pink food color and mix nicely.
  4. Cook till the mixture becomes thick.
  5. Add 1 tsp rose water in it. Mix well and pour in the small dessert cups/ mousse cups.
  6. Chiil in the refrigerator for 2 hours.
  7. Now beat whipped cream with powdered sugar and 1/2 tsp rose water.
  8. Beat this soft peaks.
  9. Put a layer of whipped cream on cook and chilled pudding.
  10. Garnish with chopped pistachios and rose petals.
  11. Serve chilled with rose syrup (Optional).
  12. You can add some chopped fruits of your choice.

‪Qatayef‬ or ‪Katayef‬ (‏قطايف‬)

Qatayef or Katayef is a Middle Eastern Dessert commonly served during the Holy month of Ramdaan.... A sort of sweet dumbling filled with Homemade Unsalted Cream Cheese and Nuts... It can be made in Two ways... FRIED & BAKED.... It was Super Duper Hit in my Family... Have fallen in LOVE with MIDDLE EASTERN DISHES.... You all also try this Superb Recipe and Fall In Love With it ;)







STEP 1 :-


Ingredients For Pancake :-


  1. All Purpose Flour(Maida) - 1/2 cup
  2. Semoline (Suji) - 1/2 cup
  3. Sugar - 1.1/2 tbsp
  4. Instant Yeast (Dry) - 1/2 tsp
  5. Baking Powder - 1/2 tsp
  6. Salt - 1/8 tsp
  7. Water - 1.1/4 cup

Method :-


  1. Mix all the dry ingredients together.Add the water and mix well.
  2. Cover the batter and allow to rest for 1 hour.
  3. After 1 hour stir the batter well and make pancakes in a non-stick pan.
  4. From the surface when it appears dry,remove the pancakes from the pan.DO NOT FLIP THE SIDE.
  5. Make pancakes  the similarly from the remaining batter and keep it on a try.
  6. Make sure to cover the tray with a cloth or a kitchen towel to prevent drying out of the pancakes.







STEP 2 :-


Ingredients For Unsalted Cheese Filling :-


  1. Full Cream Milk - 1/2 cup
  2. Cottage Cheese (Paneer) - 1/2 cup
  3. Sugar - 1.1/2 tbsp
  4. Cornflour - 2 tbsp
  5. Butter - 1 tbsp
  6. Rose Water - 1 tsp


Method :-


  1. In a pan take milk,sugar,cottage cheese(paneer) and cornflour.
  2. Mix all very well and put it on medium flame and cook.
  3. Keep stirring the milk continously.It will take 5 mins to cook.
  4. After 5 mins the mixture will become thick.
  5. Switch off the gas and add buter to it and mix well.
  6. Let the mixture cool and add rose water to it.
  7. Blend with a hand blender to make a smooth paste.
  8. The Unsalted Cheese is ready.
  9. Keep it in the fridge.

STEP 3 :-


  1. Take a pancake and put 1 tsp of cheese filling in the middle,sprinkle some chopped pistachio and fold into a semi circle.
  2. Press the end together and they will stick.
  3. You can deep fry it or you can bake it.
  4. I personally like the baked one.
  5. For baking Pre-Heat the oven at 180° C
  6. Grease the baking tray and brush butter on the pancakes.
  7. Bake at 180° C for 25-30 mins.Turn after 15 mins.
  8. They should be browned lightly and the surface will be crisp.

STEP 4 :-


Ingredients For Sugar Syrup :-


  1. Sugar - 1/2 cup
  2. Water 1/4 cup
  3. Lemon Rind - 1/4 tsp
  4. Lemon Juice 1/2 tsp
  5. Rose Water - 1/2 tsp

Method :-


  1. Take sugar in a pan add water to it and bring it to boil.
  2. Add lemon rind and lemon juice.
  3. Boil for 3-5 mins.
  4. Switch off the gas and add rose water.

STEP 5 ;-


  1. Dip the hot Qatayef in the sugar syrup.
  2. Drain the excess syrup.
  3. Garnish with Silver Waraq and chopped pistachio.

Chatpata Masala French Fries

We all love French Fries..!!! But usually french fries are deep fried potato fingers.Here i came with the recipe of Chatpata Masala French Fries made with just 2tsp of oil... So now you can enjoy your favorite French Fries in less oil.. Which is Healthier also...!!!
I got this recipe from my Air-fryer recipe book but i did a little changes in the recipe..!!! 








Ingredients :-

  1. Potatoes - 3-4 (Medium Size Peeled and Cut into Fingers)
  2. Oil - 2 tsp
  3. Italian Seasoning Mixed - 2 tsp
  4. Red Chilli Flakes - 1/2 tsp
  5. Lemon Juice - 1 tsp
  6. Salt to Taste
  7. Coriander Leaves for Garnish - 2 tbsp

Method :-

  1. Blanch the potato fingers for 2 mins.
  2. Filter and pat dry the potatoes fingers with a kitchen towel and transfer to a dry bowl.
  3. Pour the above ingredients and mix to coat the potato fingers.
  4. Pre-heat your Air-fryer for 5 mins at 180° C.
  5. Arrange the potato fingers in the fryer basket and close it properly.
  6. Bake it for 20-25 mins.Toss twice in between for even cooking.
  7. Garnish with chopped coriander leaves and serve HOT with tomato sauce.
