“Lebanese Nights” Or "Layali Lubnan"




Its name directly translating to "Lebanese Nights", "Layali Lubnan" is a ubiquitous and well-loved dessert not only in Lebanon, but throughout the Middle East. It is an incredibly delicious dessert, at its base is a soft, yet sliceable semolina pudding that’s then covered in rose flavoured cream, fruits, nuts and simple sugar syrup or drizzled with a rose-scented syrup. Traditional versions are almost always garnished with pistachios. I prefer to make it without the syrup and like to add a few drops of pink food colouring to give the dessert a vivid pick of colour which contrasts so beautifully with the whipped cream. Very pretty and highly refreshing in the summer time..






Ingredients :-


  1. Milk - 2 cups
  2. Rava (Soji) - 1 cup (Do not Roast)
  3. Condensed Milk - 5 tbsp
  4. Rose Water - 1.1/2 tsp
  5. Whipped Cream - 1/2 cup
  6. Powdered Sugar - 2 tsp
  7. Pistachios(Chopped) - 5-6 tbsp
  8. Rose Petals - 2 tsp
  9. Rose Syrup - 3-4 tsp (Optional)
  10. Pink Food Color - 1/4 tsp


Method :-


  1. In a heavy bottom pan cook milk, rava(soji), and condensed milk.
  2. Keep stirring continuously so that there should be no lumps.
  3. Add pink food color and mix nicely.
  4. Cook till the mixture becomes thick.
  5. Add 1 tsp rose water in it. Mix well and pour in the small dessert cups/ mousse cups.
  6. Chiil in the refrigerator for 2 hours.
  7. Now beat whipped cream with powdered sugar and 1/2 tsp rose water.
  8. Beat this soft peaks.
  9. Put a layer of whipped cream on cook and chilled pudding.
  10. Garnish with chopped pistachios and rose petals.
  11. Serve chilled with rose syrup (Optional).
  12. You can add some chopped fruits of your choice.
