Its name directly translating to "Lebanese Nights", "Layali Lubnan" is a ubiquitous and well-loved dessert not only in Lebanon, but throughout the Middle East. It is an incredibly delicious dessert, at its base is a soft, yet sliceable semolina pudding that’s then covered in rose flavoured cream, fruits, nuts and simple sugar syrup or drizzled with a rose-scented syrup. Traditional versions are almost always garnished with pistachios. I prefer to make it without the syrup and like to add a few drops of pink food colouring to give the dessert a vivid pick of colour which contrasts so beautifully with the whipped cream. Very pretty and highly refreshing in the summer time..
Ingredients :-
- Milk - 2 cups
- Rava (Soji) - 1 cup (Do not Roast)
- Condensed Milk - 5 tbsp
- Rose Water - 1.1/2 tsp
- Whipped Cream - 1/2 cup
- Powdered Sugar - 2 tsp
- Pistachios(Chopped) - 5-6 tbsp
- Rose Petals - 2 tsp
- Rose Syrup - 3-4 tsp (Optional)
- Pink Food Color - 1/4 tsp
Method :-
- In a heavy bottom pan cook milk, rava(soji), and condensed milk.
- Keep stirring continuously so that there should be no lumps.
- Add pink food color and mix nicely.
- Cook till the mixture becomes thick.
- Add 1 tsp rose water in it. Mix well and pour in the small dessert cups/ mousse cups.
- Chiil in the refrigerator for 2 hours.
- Now beat whipped cream with powdered sugar and 1/2 tsp rose water.
- Beat this soft peaks.
- Put a layer of whipped cream on cook and chilled pudding.
- Garnish with chopped pistachios and rose petals.
- Serve chilled with rose syrup (Optional).
- You can add some chopped fruits of your choice.
