A healthy version of Pasta is here....Green Sauce is a Healthier Sauce for your Pasta,with lots of Vitamins from Spinach and plenty of Spicy Flavours from Green Chillies, Fresh Mint Leaves and Fresh Coriander Leaves..

Ingredients For Base Sauce :-
- Fresh Mint Leaves - 2 tbsp
 - Fresh Coriander Leaves - 1/2 cup
 - Green Chillies - 1
 - Milk - 2 tbsp
 - Juice Of Lemon - 1
 
Other Ingredients :-
- Pasta of your choice (boiled) - 200 grms
 - Fresh Spinach - 2 cups (finely chopped)
 - Onions - 2 (finely chopped)
 - Oil - 2 tbsp
 - Garlic Paste - 1/2 tsp
 - Cumin Powder - 1 tsp
 - Red Chilli Flakes - 1 tsp
 - Turmeric Powder - 1/4 tsp
 - Cumin Seeds - 1/4 tsp
 - Fresh Cream (fresh malai) / Coconut Milk- 4 tbsp
 - Water - 3/4 cup
 - Salt to taste
 - Fresh Coriander For Garnish
 
Method :-
- Make a paste of base sauce ingredients into a fine paste.
 - Heat oil, add cumin seeds, let them splutter then add onions and fry until golden brown.
 - Now add garlic paste and cook for 2 mins and then add spanich, turmeric powder,cumin powder and salt.
 - Stir fry for 4-5mins until spanich begins to soften.
 - At this stage add the base sauce paste and water.
 - Cook on low heat for 5-7mins until the mixture is cooked nicely.
 - Now add fresh cream / coconut milk, stir and sprinkle chilli flakes and adjust salt according to your taste.
 - Simmer for 5mins and turn off the heat.
 - Now add boiled pasta into the cooked green sauce and mix nicely.
 - Garnish with fresh coriander leaves.
